Fresh Okanagan Apples Deserve Tasty Recipes!

Hope everyone is managing to stay dry on this rainy day. Our market day tomorrow looks set to be drier and sunnier, so I look forward to seeing you there! We'll have fresh Sunrise apples in from the Okanagan along with delicious honey from  Jane's Honey Bees, which you can put to good use in the recipe below for mini-apple crisps. Mini Apple Crisps

2 large apples, peeled and cored, and chopped
3 tablespoons honey
Juice of 1⁄2 lemon 1⁄2 teaspoon ground allspice
4 tablespoons unsalted butter 1 cup rolled oats
3 tablespoons packed light brown sugar

• Preheat the oven to 425 degrees F. Place a baking sheet in the oven to
heat. Put the apples into a saucepan and stir in the honey, lemon juice, and
allspice.

• Bring to a boil over high heat, then reduce the heat to medium, cover the
pan, and cook for five minutes or until almost tender.

• Meanwhile, melt the butter in a separate pan, then remove from the heat
and stir in the oats and sugar.

• Divide the apples amongst four 1-cup ovenproof dishes. Sprinkle the oat
mixture over the apples. Place on the baking sheet in the preheated oven
and bake for 10 minutes, until lightly browned and bubbling.

• Serve the crisps warm
