Stuff Your Face with Stuffed Patty Pan Squash!

Patty Pan Squashes fresh in from God's Little Acre Farm make their debut to the market this Wednesday! Try out this delicious summer squash with this reciple courtesy of fitfortwotv. I've modified the reciple slightly to include items that you can find at our market this week (*)



Preheat Oven to 350 decrees F
4-5 Patty Pan Squash*, hollowed out

Stuffing:
1 Can Black Beans, rinsed & drained
1 Yellow Onion*, diced
1 Clove Red Russian Garlic*, diced
Few tbsp of lemon juice
Crimini mushrooms*, diced
Golden Zucchini*, grated
Salt and Pepper
1 tsp Ginger Powder
Oliver Oil
Red Wine Vinegar (could substitue worchester sauce or soy sauce)
Maple Syrup (can substitute 1-2 tsp sugar)

Fill squash with stuffing, sprinkle your favorite grated cheese on top
Wrap bottom of squash in tinfoil. Bake 30-45min (depending on size of squash) in a pan with 1 inch of water

Serve with side salad and roasted veggies (like beets, potatoes, red kohlrabi, and carrots from our market!)
